Are there any sites where I can find how much certain specific Canadian / North American industries are worth? In particular, I'm looking for the industry that includes packaged desserts (pastries, cakes, pies, etc.).

I'm pretty sure this is it..but in particular, under what heading/data set would i look under if i would like to see what would be, i guess, a "net worth" for the industry?

Try ValueLine, Dow Jones, and Standard and Poor's stock reports.
